Chocolate Zucchini Protein Muffins

Trying to life a healthier lifestyle is difficult when
you're surrounded by temptation.


I have been making a better effort of trying to choose healthier snack options. It definitely is difficult some days especially when going out with friends. Temptation is all around you! So my tip for you, what has helped me, is try to plan and make healthier snack and food options, and pack all your food with you before going out. This way you feel bad NOT eating your food and you'll be more inclined to do so. I mean Chocolate Muffins, who wouldn't want to eat those! 

I have included the recipe below for the chocolate zucchini muffins I made. They are absolutely amazing! I did use the protein from Your Aura Nutrition because I enjoy the flavour, the fact that it's Canadian but most importantly, the way they have made this protein it is specifically for women's health! Plus it actually tastes really good! 


Chocolate Zucchini Muffins

4 cups of shredded zucchini
2 scoops of chocolate protein powder
1 cup of ground oats
4 eggs
2 tsp vanilla extract
2 tsp cinnamon
3/4 tsp of baking soda
1/4 tsp of baking powder
1/4 tsp of salt

For best results make sure after you have shredded the zucchini, place it on some paper towel and try to take out some of the water but not too much as you will need some to maintain moisture in the muffins. You will then mix all the ingredients together and bake for 20 minutes at 350. Depending on your oven of course, mine only takes about 15 because it is convection.
